Origin and <\/b>composition <\/b><\/p>\n

\nRaw material:<\/b> product obtained from the rear and inner thigh muscles (biceps femoris, semimembranosus and semitendinosus) of the pig, totally deprived of the rind and partially of the covering fat and completely separated from its bone base and sectioned so as to take on a “pear” shape. The salting is carried out exclusively dry, the stuffing takes place in natural casing and the binding is carried out by hand with string.
